"Old Nick" Scotch Bonnet Sauce

Silver award winner in The Great Taste Awards 2005. Scotch Bonnets take no prisoners! But they can take your breath away and they often surprise the uninitiated thanks to their characteristic delayed action. First the taste and then, seconds later the heat sneaks up on you....and it keeps on coming. Wonderful stuff! Do not be put off if the colour of the sauce varies from batch to batch. This is due to the fact that Scotch Bonnets can be pale green, dark green, pale yellow, dark yellow, orange or red and in a variety of shades. This does not affect the flavour in any way. They are always hot!

This is the most wonderful chilli sauce in existence, and I have tried hundreds. It is a hot one, but full of flavour without any sourness and you
can use a little or a lot depending on how 'tolerant' you are. I have it in soup, on bacon sandwiches, as a dip with crisps and use a bottle a month.
It must be good for the immune system too because I am hardly ever ill these days (the bugs cannot take the pace!). It is a triumph. (I am now
going to try the pickles!).
