Brinjal Pickle


This Brinjal pickle is what I would regard as a medium hot pickle. Most people who enjoy curries, even mild curries would enjoy this one. Although intended, like most pickles of this type, to be eaten with curries, I have known customers to enjoy it with cheese, cold meats, jacket potato and even as a marinade. Definitely a favourite for all the family.


Ingredients:
Brinjals (Aubergines), vinegar, sunflower oil, ginger, garlic, sugar, spices, salt, curry leaves, mustard seeds.
